Lentil Chili

I made this last night for dinner and it was good tasting, easy and fairly quick to put together..  can’t ask for more than that in a healthy meal!


 


Lentil Chili

3 ½ cups lentils


8 cups water


1 T salt


1 lb hamburger


1 medium onion, chopped


1 jalapeno pepper, chopped, optional


4 t chili powder


1 t cumin


1 can Rotel tomatoes


 


Combine lentils, water and salt and bring to a boil. Reduce heat and let simmer 45 to 50 minutes or until lentils are soft.


 


While lentils are cooking fry hamburger, onion and jalapeno pepper (if using) until hamburger is no longer pink and vegetable are tender. 


 


When lentils have finished cooking add hamburger onion mixture and remaining ingredients.  Serve with tortilla chips or cornbread a nice tossed green salad for a yummy dinner.

  2. We tried this tonight and it was WONDERFUL. I have made lentils before and they were yuck but I was very suprised. I did half the recipe (for DH and I) and have alot leftover.

  3. What is your recipe for the sausage soup? The chili sounds great. It's a little too warm here for chili since the highs are in the 80s!
