Granola Galore

I have made about 40+ cups of granola today!  I made a double batch of My Favorite Granola and a triple batch of Peanut Butter Granola (now I'm ready for my boys to come home.. ):


(peanut butter granola is on the left..  they look the same, but they taste different!).. 



 


Peanut Butter Granola


Crystal Miller


 


6 ½ cups oats


½ t salt


1/3 cup olive oil


¼ cup honey


1 t vanilla


2/3 cup all natural peanut butter


1 cup raisins


 


Combine oats and salt in a large bowl.  In a small sauce pan combine olive oil, honey and peanut butter and heat to combine well.  Remove from heat add vanilla.


 


Pour over the oats and mix well.  Spoon onto 1 large jelly roll pan.  Bake at 325 for 1 houror until it is golden brown. Stir every 15 minutes.   


 


Let cool.  Add raisins and store in air tight containers.

  1. I have a peanut butter granola, too. This one is a bit different, having oil. But I may try yours as mine is dry, although it is good for munching and on parfaits. I think I might like to make my own granola bars... I'll have to do some searching for recipes for that.

  4. I have the same recipe as you. A WONDERFUL addition that really makes it a treat is 1/3 to 1/2 cup carob or cocoa powder. You put it in with the peanut butter, oil and honey when you're melting them. Coconut and almonds is great too :-)

  5. One question though can you leave out the raisins (dd and I both do not like them) ?
