Good Morning! Here's a look at what I was cooking up last week... We started off the week with burgers. I had some sliced pepper jack cheese I took out of the freezer and used a slice of that and some chopped onion to add to my hamburger. I also added spices (to taste), salt, pepper, garlic, Mrs. Dash Garlic and Herb. I made 3 burgers for us from this..   We also put some corn on the cob on the grill to go with this and had potato chips on the side.  The burgers were so good.  We had leftover corn and had that with bbq'd steak and baked potatoes for the next night. I made the Caesar Salad Kit that I mentioned in my grocery haul to with this meal.. I was in the mood to make soup and the day was cool and cloudy which would have been a perfect soup day, but instead I made some ham alfredo because it seemed quick and easy to put together. Good Morning! Here's a look at what I was cooking up last week... This last week wasn't all that creative. We grilled a few times. It was easy and a fun way to spend time enjoying the warmth of summer and visiting with my son.  We had burgers twice. Once was last Sunday and I posted that one last week. On Monday we had the same thing, so I didn't bother to get a picture.  Our next meal was steak and corn on the cob. I served salad and potato salad for sides..   I made a quick meal of burritos on another night. I cooked up brown rice in my IP and while that was cooking I fried up 2 pounds of hamburger. When it was done I mixed in about 2 1/2 cups or so of the brown rice and seasoned it with salt, pepper, garlic and taco seasonings.  I put this on tortillas with a little cheese and a sprinkled hot sauce on it and rolled it up burrito style.    I served this with salad and tortilla chips with extra salsa ...

Good Morning! Here's a look at what I was cooking up last week... The week started off with sausages, corn on the cob, salad and french bread.. We cooked the sausages and corn on the BBQ and I did a double batch so we could have it for 2 nights.. I had a package of boneless pork ribs in the freezer and wanted to use them. A few weeks ago I saw some marinade packets at the store and thought I'd give them a try.  I used this one for the pork.. This was easy to use. I dumped the packet into a zip lock bag and added water, oil and vinegar (according to the package directions). I put the pork meat in the bag and squished it around and put it in the fridge to marinade for a couple hours.  We cooked these on the BBQ and they were so good! I served them with baked red and yellow potatoes and a salad..   On grocery day, hubby wanted steak and then saw shrimp he wanted as well. He picked up 1 T-bone steak ...

Good Morning! Here's a look at what I was cooking up last week! I started the week with a super simple dinner. I had purchased a rotisserie chicken from Costco and we had that with some of the leftover alfredo pasta and a salad..    The next night I still had quite a bit of chicken left so I decided to make some enchiladas. I didn't have sauce in a jar so I made my own. If I had it to do again I would have made a few changes (which I'll share). I thought they turned out a little dry, but Hubby loved them.  I started by making the sauce. I used a can of diced tomatoes, taco seasoning, cumin and salsa..  I put the diced tomatoes in a bowl and added: 2T taco seasoning 1t cumin,  1/2 cup salsa I mixed this all together...  At this point, if I had it to do over, I would have used my stick blender to puree the sauce. I think this would have helped. Then it was time to roll and fill...

Good Morning! I did a much better job this week of getting all my photos! Here is a look at what we had to eat. Last week ended with lasagna and I had enough leftover to send with my Hubby to work. My grandson made a little frozen pizza and I opted for a healthier dinner! :D I made myself a salad, or maybe it could be called a chef salad.. On top of a nice bed of salad greens I put cabbage, grape tomatoes, red onion, sliced cucumbers and then topped it with a piece of turkey lunch meat that I cut up and feta cheese. This was very filling and I really enjoyed it.  Then, if it can be believed we had a cold, wet and windy day (yes in mid-July!). The house was so cool I even started a small fire that morning to take the chill off. I decided it was the perfect weather for soup. I do admit that I like soup in any weather, but something about a cold wet day just made it sound all the better.  I made chicken potato soup. I started to take pics of the process ...
