Delicious and Simple! 3 Dutch Oven Dinners

  I've really enjoyed using my Dutch Oven this winter. I'm made quite a few meals with it. I wanted to share 3 simple and delicious meals with you.. The first one is Roasted Chicken. I could not believe how moist and delicious this roasted chicken was. I don't plan on roasting chickens any other way in the future!  Dutch Oven Roasted Chicken Delicious & Moist! Season a 3 to 4 lb chicken with your favorite seasonings. Wash & cut up a few potatoes Put half the potatoes on the bottom of a Dutch oven. Place whole chicken on top. Add remaining potatoes around chicken. Put the lid on and bake at 375 for 1 hour. Remove lid and bake 30 minutes more or until internal temp is at least 165. How to Make Chicken Stock in the Instant Pot

I love how fast and easy it is to make chicken stock in the Instant Pot. I have recipes, tutorials and videos on how to make stock on the stove or the crock pot as well. But unless I'm making a huge batch of stock my go-to method nowadays is making it in my IP.  It takes 1 hour of cooking time to yield the most delicious stock! The overall process takes a bit more than 1 hour. There is the time needed for the IP to come up to pressure and the time needed for the pressure to drop on its own.  I often purchase Costco rotisserie chicken. It's a bargain in my mind. For $5 I get a whole chicken seasoned and cooked. For the two of us I can end up easily with 3 meals from this. And then I also get the bonus of being able to make chicken stock from it as well. Things are getting a little scary out there with articles on possible food shortages.  Having some healthy delicious meals you can make with beans and minimal amounts of meat is very frugal and helps stretch resources. This was how I fed my large family for many years.  I'll be sharing some of these meals over the next few blog posts.  Black Bean Chicken Chili was a big hit with my family.  This meal can easily be made meatless as well or with less meat then the recipe calls for.  This recipe makes a lot of chili. The Family Homestead Archives #2 ***********  How to use 10lbs of Chicken On a recent trip to the grocery store I found 10lb packages of chicken quarters (these are the leg/thigh pieces) on sale for an exceptionally good price. I bought 3 packages of them. I put two in the freezer and cooked up the remaining package into meal starters. A meal starter is simply something that has been prepared ahead of time to make your cooking time go smoother and more quickly.  This month I thought I would share some basic info and recipes on how and what to do with a bulk amount of chicken. There are a couple of different ways you can cook the chicken. I have put all the chicken into a roasting pan with chopped up veggies, covered it with a lid or foil and then let this cook for several hours at about 325 degrees. I had a request for how I make fried chicken in the air fryer and was finally able to have the time to take pictures the last time I made it. I love how simple it is to have fried chicken without the mess of a deep fryer. I've actually loved my air fryer for so many things. I purchased my air fryer at Costco last year. The brand is Gourmia and it is a 5 quart fryer.     I would not recommend a smaller size. I've been very happy with my Gourmia. Costco is no longer selling this brand and is selling a Phillips brand air fryer. My son has that one and has been happy with it.  Now on to the fried chicken.. The first thing I did was to mix up the flour that I coat the chicken with. Chicken Bacon Spaghetti

Oh my gosh this was good!  I enjoyed it and it was very much 'husband approved' :) You will find the recipe at the bottom of this post.  I started making this recipe by getting my pasta going and baking my bacon. If I'm going to use the bacon in a recipe I will bake it in the oven. If I'm going to use to go with breakfast I cook it in cast iron. It's just a personal taste preference.  To bake the bacon I laid it out on a tray lined with parchment paper.  I don't worry about it overlappin g.     Bake at 400 degrees for 15 to 25 minutes depending on your desired thickness.  And for this recipe you will want it fairly crisp. When the bacon has finished cooking put it on a plate lined with a napkin or paper towel to absorb the fat and let it cool for a bit.      Now you can put it in your food processor and let it do the crumbling for you.
