Favorite Breakfast Recipes | The Family Homestead Archives #7

Overnight Cinnamon Oatmeal Pancakes Crystal Miller 2 cups quick oats 2 cups milk, buttermilk would work also ½ cup whole wheat pastry flour 2 T fructose or Sucanat 1 t. baking powder 1 t. baking soda ½ t. cinnamon ½ t. salt 2 eggs ¼ cup very soft butter The night before mix together the quick oats and milk, and refrigerate until morning. In a separate bowl mix together flour, fructose or Sucanat, baking powder, baking soda, cinnamon and salt. Set this aside. In the morning mix the oatmeal mixture, eggs and butter into the dry ingredients. You will most likely need to add more milk. Add one tablespoon at a time until it reaches the desired consistency. Cook on an ungreased skillet or griddle over medium heat. These take a little longer to cook than regular pancakes. Homemade Instant Oatmeal

This is another favorite from The Family Homestead that I wanted to share with you. Although fall is a ways off, it's not to early to be thinking of quick warm breakfast foods. Homemade Instant Oatmeal is easy to make and frugal as well. I made this quite often over the years for my family and it is great to have on hand.  This recipe makes a lot but would be easy to cut in half as well. It will fill a one gallon container. Below the recipe are pictures to show you how to make it.   Instant Oatmeal Mix Crystal Miller 20 cups quick cooking oats 2 cup powdered milk 2 tablespoons cinnamon 1 tablespoon salt Take about half of the oats and run them through a blender or food processor to make them smaller… you don’t want flour though! Crystal's Favorite Homemade Granola

Years ago granola was a staple in our home.  I made gallons and gallons of it to keep 8 hungry tummies full for breakfast. It was much better, in my opinion, than commercial breakfast cereals.  Now that my kids are grown and gone it has been years since I made a batch of granola. This year I wanted to give it away as gifts. I pulled out my recipe and got busy! The ingredients for granola are very simple. You can make changes based on your own preferences.  The basic ingredients you will need are:  Oats Flour Powdered milk Coconut flakes Cinnamon Salt Oil Honey Vanilla To begin get a very large bowl and add the oats, flour, powdered milk, cinnamon and salt.  Stir it all up to combine everything. Breakfast Recipe Ideas

I'm still on vacation and this week I wanted to share with you a few breakfast recipes.  My typical Menu Monday does not include breakfast meals.  So I thought I'd share a few ideas today.  ************************************ I've always liked this recipe because it's something you can make and have on hand all week long. Refrigerator Pancake Batter 2T yeast ½ cup warm water 4 cups flour 1 ½ t baking soda 2t baking powder 6T sugar 2t salt 6 eggs ½ cup olive oil 3 cups buttermilk In a small bowl combine yeast and warm water and let this sit for a few minutes to activate. In a large bowl combine flour, baking soda, baking powder, sugar & salt. In a medium bowl beat eggs and add oil and buttermilk. Add yeast mixture and buttermilk/egg/oil mixture to the flour. Stir to combine. Cook these pancakes at a slightly lower temp and a little longer cooking time than regular pancakes. The batter can be stored in the fridge for a week or so. Ma...

Pasta Salad & Sunday Brunch

This week in Friday in the Kitchen I'll be sharing an easy and yummy pasta salad that I made and a fun little impromptu brunch I made for the hubs and I. Pasta Salad First the pasta salad. I wanted to serve a pasta salad as a side dish to one of our meals last week. I just followed my own recipe and was very pleased with out it turned out. I started by boiling 8oz of pasta. I used seashell pasta but any shape works well. I then cut and sliced up a tomato and some olives. I opened a can of black beans and drained and rinsed them. and I pulled out a large handful of baby spinach leaves. For the dressing I made a batch of Italian Dressing . You can make your own or use store bought.    I combined it all and tossed in a little parmesan cheese in the end.  I let it sit in the fridge a couple hours to allow the flavors to combine well.   Happy Friday!!   Friday in the Kitchen is about sharing some of the food I've been cooking in my kitchen this week..    Veggie Enchiladas I mentioned on Monday that I was going to be trying out a new recipe creation for Veggie Enchiladas.  And I did..  and they were so good! My family really enjoyed them. I served them with chicken because the men in my family are not fans of meatless meals. :) But it could easily be served as a meatless main dish.        Veggie Enchiladas 2 small sweet potatoes 3 small carrots, peeled 1 small onion, chopped ½ cup celery slices 4 baby portabella mushrooms (this is what I had, any type of mushroom will work) 1 4oz can green chilies 1 T sliced jalapenos (I used jalapenos from the jar) 1t salt 1t chili powder 1t cumin 1 can green enchilada sauce 9 corn tortillas Cheese to sprinkle on top, optional Cook the sweet potatoes and carrots. Breakfast Smoothies

I've found smoothies to be a great way to start my day. They are so versatile! You can make them in so many different ways. I also like the fact that I can add extra things to them to boost their nutritional value. One of my favorite things to add to my smoothies is chia seeds. Those little seeds really pack a huge amount of nutrition in each teaspoon. They are basically tasteless so they don't change the flavor of the smoothie. They also add a little bit of thickening as well. When added to liquids chia seeds expand in size and become somewhat gelatinous. Here is what I've found out about chia seeds... Refrigerator Pancake Batter and Homemade Buttermilk

My older children living at home all work and have schedules that are all different. Breakfast can be a challenge for them. Sometimes I make a meal for them, but usually they take care of their own breakfast. I wanted to give them something easy as an option so I made up a pancake batter that can sit in the fridge for a week or so. When someone wants a couple pancakes they simply pull it out of the fridge, stir it up, cook up a few and put the batter back in the fridge.
