Menu Monday!




Good morning and happy Monday! I'm so thankful and excited to let you know that my surgery on Wednesday was a success! My vision is no longer double and I've been recovering very well. I'll share more on Wednesday about it all but wanted you to know of the success. My eye is still sore and red and reading or focusing on a computer screen for very long can be uncomfortable. This is why there was no blog post on Friday.

Today I'm back at it and ready to tackle the menu for the week.


Monday: Sub sandwiches, french fries, salad – yesterday I cooked up a package of brats that I had in the freezer and made some brown rice to go with them. I have leftover brats today and we'll have those in sub sandwich rolls. I recently purchased an air fryer and I love it! The french fries will be made in that.

Tuesday: Split pea soup, biscuits, salad – I'll use a couple of my hot link sausages in the soup and make some biscuits on the side. The weather is supposed to be cooling down for a few days so soup is sounding really good.

Wednesday: BBQ chicken (going to make this in the air fryer), potatoes of some sort (baked, mashed, or ?? still thinking on this), salad

Thursday: Leftovers

Friday: Spaghetti, french bread, roasted broccoli, salad

Saturday: Leftovers

Sunday: Asian chicken potsticker soup, salad and crackers or bread on the side

  1. Glad to hear you're doing lots better. I've wondered if those air fryer things work -- the infomercials make some things look better than they actually are, but to have things air fried instead of deep fried would be nice!

  2. I too have an air fryer and love it. I've never tried chicken in it and will be interested to hear how yours turns out. So glad to hear that surgery was a success.

    1. Thank you. I've done chicken with a flour coating on it and it was delicious! Crispy on the outside and moist and tender on the inside. Can't wait to make the BBQ chicken tomorrow. I'm a day off on my menu 😀
