Zucchini Coffee Cake
I am still keeping up with the zucchini that my very nice neighbor brings me. My own plant may be producing soon and I will need to keep the zucchini creativity going! LOL…. One of these blog posts I will gather together all my zucchini recipes and share them with you. But for now, I will share this zucchini coffee cake recipe that I made this morning for the family. I also served fresh organic peaches that I got from my Azure order.. yum, yum!!
Zucchini Coffee Cake
1 ½ cups whole wheat pastry flour
1 ¼ cups oats
1 cup Sucanat
1t baking soda
1t cinnamon
½ t salt
2 cups shredded zucchini
½ cup butter, softened
¼ c yogurt
1t vanilla
2 eggs
Topping:
¾ cup cane juice crystals
½ cup whole wheat pastry flour
½ cup oats
½ t cinnamon
¼ cup butter, softened
This is a very easy coffee cake to make. Combine all of the cake ingredients into your Kitchen Aid or Bosch bowl (or use a mixing bowl and a hand mixer) and blend until it is well combined. The batter will be thick. Spoon and spread this into a 9x13 pan that has been sprayed with non-stick spray. Combine the dry ingredients for the topping and use a fork or your (clean) hands to mix in the butter until it is crumbly. Sprinkle the topping over the cake. Bake at 350 for 35 to 40minutes.
I love zucchani! My mom makes zucchani brownies sometimes! I will defiantly give her this recipe!

I never made a coffee cake with zucchini sounds good I must try it. I wonder if I could use white flour? and regular sugar? do you know? I'm a bad girl I like all the things that aren't good for us..LOL haflinger

ReplyDeleteThis sounds yummy- I will have to try it since I am still pulling zucchini from the EIGHT zucchini plants my overzealous husband planted :) I have been making these incredible zucchini brownies that are just... ... ... there are no words to describe how good they are. Suffice it to say I can only make them once every couple of weeks. Thanks for the recipe!

I love your blog and I am always excited reading it everyday since I am a stay-home wife and a mommy of a 3 months old baby,I learn a lot from it and I am so grateful that I found you because you have helped me in so many ways.Anyway,I just started baking, I am from Asia,we don't bake a lot because our weather is hot and most of us don't have an air condition in our house ,so when I got here I love to start new things including baking and do a lot of cooking. I really don't know what is Sucanat, and where can I buy it?
