Mustard Garlic Pork Chops

This recipe is sooo easy and tastes so yummy!! I served it with mashed potatoes and a salad. It all got eaten up, no problems! I used about 5 ½ lbs of pork chops to feed everyone at the meal. If you are using smaller amounts of pork chops you can reduce the mustard sauce accordingly. Mustard Garlic Pork Chops ½ cup Grey Poupon mustard 6 to 9 garlic cloves, chopped or pressed through a garlic press 2T lemon juice 2T honey Salt & pepper to taste Combine all ingredients. Cover a baking pan with oil, I use coconut oil, but olive oil will work too. Lay pork chops on pan. Spread mustard mix over the pork chops. Bake at 375 until the chops are done. This can be anywhere from 25 to 45 minutes depending on how thick your chops are. Super yummy and oh so easy!!   

Homemade Coffee Syrups

My daughter Sierra loves to make espresso and add flavored syrups to it. Buying them can be spendy and so she started experimenting and making her own. Personally, I’m just a coffee w/half n half kinda gal.. but occasionally I enjoy adding a bit of one of her homemade syrups. They are so easy to make and taste so good!! You can add as much or as little as you would like to your coffee. You can also sub cane juice crystal’s for the sugar as well. Here are a few of her recipes… Vanilla Syrup 1 cup water 1 cup of white sugar 1 TBSP of vanilla extract*   Heat the sugar and water up till it all dissolved and mixed together then add the vanilla extract. done.   *as a variation you can add a different extract like hazelnut, almond or peppermint or whatever suits your fancy! Asian Chicken Rice

Originally I had planned on my weekly menu to make teriyaki chicken and fried rice then I changed my mind and made this one dish meal instead.  It was very yummy and the family really enjoyed it.    Awhile back I posted a recipe for Korean Pork… which was amazing. The recipe can be found HERE . This is a little twist on this recipe that turned out so yummy.  Asian Chicken Rice 2 lbs boneless, skinless chicken (breasts or thighs), cut into bite size pieces 1 batch Korean Marinade 5 to 6 cups cooked brown rice 1 large onion, diced 1 red or yellow pepper, chopped 1 bunch of celery sliced 5 to 6 mushrooms, sliced 2 to 3T coconut oil (or olive oil) Put chicken in a bowl and cover with about 1 cup or so of the Korean Marinade. Put in fridge and let marinade as long as possible (2 to 6 hours). While chicken is soaking in marinade cook a pot of brown rice (info HERE ). I’m Back!! And Updates from the Homestead

I’m back from an amazing week away with my husband. We had such a great time. We enjoyed heat and sun and lots of relaxation. Met up with friends that have the same yearly destination. We’ve made friends with a couple from England that vacation each year at the same time. We always look forward to seeing them and hearing about the updates in their life from the year. In all ways we had a blessed time away. My sister in law handled the home and my father in law and it was such a blessing not to have to worry about anything at home. She handled it all with the fantastic grace and servant’s heart that she has. She is not only a faithful friend to me, but a beautiful example of God’s love in action. On the home front.. Well.. I’m home now and have so many things to look forward to. A garden to plant is on the top of my list! I’ve got my little tomato plants growing in my husband’s shop under the lights. I only planted half of what I normally do. Tomorrow I plan to transpl...

A Short Break

Thanks to the love and kindness of my sister in law, Tobin & I will be taking a little vacation. She will be holding down the fort and taking care of grandpa.
