Wednesday on the Homestead




Tobin took Sunday night off, one day ahead of his normal weekend and it has thrown off my whole week. :) .. I woke up this morning thinking it was Thursday and how much I still needed to get done this week and then breathed a sigh of relief when I realized it Wednesday.. still time to get important tasks taken care of.




My to-do list today involves lots of laundry! Seems like the household laundry has piled up in the last few days. I spent both Monday and Tuesday in town. One day running lots of errands with my hubby and the next day grocery shopping. Today will be mostly a home day to catch up but in the later afternoon I need to go spend some more time cleaning our vacant rental. It has been rented and the new tenants will be moving in soon so I need to get this taken care of.




Last night I made such a yummy dinner. I made a crockpot pineapple pork roast, black beans, brown rice pilaf and coleslaw (using a freshly picked cabbage from my garden). I made a huge meal with thoughts that there would be leftovers… well, you know how life goes.. my boys brought their friends home right at dinner time and the big meal was inhaled pretty quick like!! I guess I did need a big meal I just did not know the exact reason.. I was just thankful to have what was needed to feed everyone.

I was planning on taking a pic of the roast and sharing it with you. But the food was served up so quickly I did not have time to snap any pics. But I will tell you how I made it because it was very simple.

Crockpot Pineapple Pork Roast
3+ lb pork roast (I used a pork loin roast from Costco)
1 can crushed or chunk (your choice) pineapple
2 to 3 T soy sauce
2 to 3 T Sucanat or brown sugar
Salt & pepper, to taste

Slice roast into thick slices and lay on bottom of crockpot. Pour pineapple (do not drain) over roast. Spoon soy sauce over roast. Sprinkle Sucanant or brown sugar over it and add some salt and pepper. Cook on low for several hours. I just let it simmer most of the day as I was gone. I would say 6 to 8 hours would be fine.




Grab and go breakfast….

There are several different work schedules going on in my home. My hubby works nights, my daughter works days, my son works most of the night (gets home in early morning hours) so it can be hard for them all to easily have breakfast. I like to make up breakfast foods for the freezer so they can have a quick meal. I have shared in the past my McMom’s Breakfast Sandwiches and Breakfast Burritos. This morning I made Ham & Egg Cups. I easily and quickly made 3 dozen of them. My boys ate them this morning and said they were very good (both daughters were long gone before I even got them started so they can try them tomorrow morning). I will see how they freeze and reheat. They could be reheated in a microwave or toaster over, whatever is your preference.

I made them by lining muffin tins with ham slices and then cracking an egg into the center. I baked at 375 for 20 minutes… very easy…






 

Saving Time
While I was making these this morning the FedEx man delivered my Amazon package to me. I have found living rurally makes it harder to get into town often. I go weekly but sometimes I find I need things and can’t wait a week to make it happen and don’t want to spend the time to locate my items and the gas to make a special trip. That is where Amazon comes in so handy. This last year I became an Amazon Prime member. It has been well worth the cost! I get free 2 day shipping on all Amazon Prime products with no minimum purchase amount. I use to wait until I had $25 in my cart in order to get the free shipping. Now as a prime member I no longer need to wait. Today my package contained protein bars.





Larabars and Kind Bars… so far these are the healthiest bars I have found and are so nice to throw in my purse for when I am out in town (I rarely do fast food) or a quick breakfast on days I need to get moving and have a lots to do. They would also make a good high protein snack. I know my kids will appreciate them as well. Especially my daughter Leanne who does a lot of things in town (for her job and for the volunteer work she is currently doing) and struggles on how to keep her energy level up, hunger satisfied and not buy junk food.

That is all from the homestead today the beeper just went off on my dryer and it’s time to get some more laundry moving through.. :)

  1. You just gave me an idea. I have a mini pie maker (electric). I'm gonna try lining it with a slice of bread, slice of ham and then an egg. Thinking it'll be good :)

  3. Thanks for sharing about the Amazon prime idea. I knew you shopped there . Time is my biggest issue right now .. I do not have time to shop. So I am thinking of getting a smart phone to add to to the convience. I really appreciate all you do to support this website !

I don’t mind shopping too much.. as long as I can fit in my day into town.. since I am almost an hour from the city just hopping in the car to pick things up is not an option.. and typically my days in town are long anyway as it is.. so having the benefit of someone delivering goods to my door is very appealing (especially with free shipping)!! I purchase a lot online… clothes, shoes, food items, household items, and so on.. and many of these items I purchase through Amazon. Crystal :)

  4. In addition, there is a "subscribe & save" option for several products. You can save a certain % off the price when you set up a regular delivery schedule. You can even cancel or change delivery, and it won't affect the previous pricing. It is a really neat way to save even more on those items you consume regularly :)

  7. Tried the ham and egg cups for breakfast this morning! We thought they were very yummy and almost no work!!!! Have you tried freezing them yet? With back to school time right around the corner, I am looking for quick make ahead freezable items. Thank your for sharing your ideas and recipes! :)

HI Donna... yes I have frozen them and they are pretty good.. we heat them in the microwave for a bit... but we all agree they are much better fresh from the oven.. so I'm not sure if I will freeze them again. They are so easy to make that I could make them ahead for a day or two just as easy. Glad you liked them!!
