Super Easy Peach Cobbler

If you ever need a quick and easy dessert this would be the one. All you need to have on hand is a 28oz can of sliced peaches and your basic baking ingredients. I made this the other night for my family and it was enjoyed by all.

Super Easy Peach Cobbler

½ cup melted butter
1 cup whole wheat pastry flour
1 cup cane juice crystals or sugar
2t baking powder
¼ t salt
2/3 cup milk
1 egg
1 28oz can sliced peaches, drained
1 cup cane juice crystals or sugar
1t cinnamon
½ t nutmeg

Preheat oven to 350 and pour melted butter into a 9x13 pan. In a medium size bowl combine flour, cane juice crystals (or sugar), baking powder and salt. Mix well. Add milk and egg and stir to combine. Pour this mixture over the melted butter, don’t worry about smoothing it out.. just pour it over the butter. Set this aside.

In another bowl combine peaches, cane juice crystals (or sugar) and spices. Spoon and/or pour the peaches over the top of cobbler batter. Don’t stir anything, just spoon all the peach mixture on top.



Put this into the preheated oven and bake for 35 to 40 minutes or until risen batter is golden brown.



This is the best when served warm with some vanilla ice cream.. enjoy! :)

  3. Can I use All Purpose flour or fresh ground wheat? Does it have to be pastry flour?

  4. Monica, I used freshly ground soft spring wheat.. this is also known as pastry flour.. it is lighter and has less protein than hard winter wheat. Soft spring wheat (pastry flour) is typically used for quick bread recipes. Hard winter wheat (bread flour) is used for recipes with yeast..

    If you would like you can also use white all purpose flour if you don't typically use whole wheat.

  8. zldybg, I'm guessing you mean can you sub equal amounts of white flour for the whole wheat and white sugar for the cane juice crystals? If so.. as the recipe states on the sugar you can use either one and on the flour I am sure it would be the same too.

  10. Your peach cobbler looks soooo gooood!! I can use your recipes and just change the regular flour for Pamela's gluten free flour (I have celiac) and use mangoes as we have no peaches here. Works just as well. Thanks for the recipe!

  12. Hi, I made this tonight for dinner when my daughter's boyfriend came to eat dinner with us. I also made the Island pork. Both were amazing meals, but I LOVED this cobbler. We had a store-bought light "homemade vanilla" icecream with it and I swear it was better than the expensive desserts at the local restaurants. SO good!! Thanks!
