Hamburger Buns and Cinnamon Rolls

I like to make my own hamburger buns and last night we had burgers so I made up a batch of my favorite dinner roll recipe and made 8 hamburger buns and a pan of cinnamon rolls from it. You can find the recipe here: http://www.thefamilyhomestead.com/wwoatdinnerrolls.htm

You can use any bread recipe to make these two items, but the one above is my favorite. You start by bringing the oats, water and butter to a boil..

After it comes to a boil pour the mixture into your mixer. Now wait for it to cool down. If you don’t wait, the mixture will be too hot and kill your yeast.

It takes about 10 to 15 minutes.. once it has cooled down add the yeast, sweetener and whole wheat flour. The recipe calls for Sucanat but you can sub brown sugar if you don’t have the Sucanat..

Mix it all up..

Now add the white flour. You may need to add more than the 2 cups called for. Add flour until the dough does not stick to the sides of mixer and it is not sticky feeling. Knead for about 5 minutes, longer if you have Kitchen Aid…

Let the dough rise until doubled, about 30 to 45 minutes. I just leave the dough in the mixer. When the rise time is done, I turn the mixer on to punch it down. Then take the dough out of the mixer and divide it into two balls…

With the first one we will make the hamburger buns. Divide the dough into 8 pieces. Spray an 11x15 pan with some non-stick spray…

Roll the dough pieces into a round ball and then flatten them slightly and put them in the pan..

Now let them rise until doubled in size. While they are rising take the second piece of dough and roll it out into a rectangle about 12x18 inches..

Spread it with lots of butter and sprinkle Sucanat or brown sugar and cinnamon over the top…

Roll it up from the longest side

I use scissors to cut the dough into pieces..

Spray a 9x13 pan with non-stick spray and lay the cinnamon rolls in the pan. Let them rise until they are about double in size.

By this time it is time to bake the hamburger buns. Bake them at 350 for 25 minutes..
Pull them out of the oven when they are done…

When the cinnamon rolls have finished rising, put them into the oven to bake. Same temp and bake for about 25 minutes. While they are baking you can make some frosting. I made a half batch of the frosting recipe that I have posted at the end of this blog..

When they come out of the oven frost them immediately….

Cut the hamburger buns in half and use them to make a delicious burger!

Cinnamon Roll Frosting (I made a half batch of this)
Crystal Miller

4 oz butter (1 stick), softened
4 oz cream cheese, softened
3 cups powdered sugar
3 T coffee**
1 T milk
1 t maple extract or flavoring

Using a mixer combine butter and cream cheese. Add powdered sugar, coffee, milk and maple flavoring. Mix well. The frosting will be somewhat thin and pourable. You can pour and spread this on the cinnamon rolls when the come out of the oven.

**note: The coffee in this recipe adds a little color to the frosting to match the slight maple taste. If you don’t want to use this you can substitute all milk instead.

  3. Hello, greetings from down under in New Zealand.

I love reading your blog and finding out about your lives in the frosty United States. It is the middle of summer here.

Just have a quick question about one of the ingredients in the Cinnamon Roll Frosting...can you describe the powdered sugar to me? it's maybe something we call icing sugar here. We use this when icing cakes and such like as it is extemely fine. Sometimes called confectioners sugar.

Funnily enough, we too are having hamburgers tonight with homemade buns.

    Kind Regards and Blessings

  4. Oh, this is AWESOME!!!! So cool....I found an organic hamburger bun at the store. They're fantastic...and this is better, because now I can make them myself at home!!! How easy is it to just bake half of that recipe, then freeze the rest for baking later? Love and hugs from Oregon, Heather :)

  12. Thanks for sharing the recipes. How would I go about freezing the dough to use for the cinnamon rolls in the morning for breakfast or later use. Also do you have any tips on how to make this dough by hand? I dont have a stand mixer.
    God bless

  13. Anonymous.. you can cover them and put them in the fridge till morning.. they will continue to rise some. In the morning let them warm up on the counter and continue rising if they need to and then bake.

I have instructions on making bread by hand here: http://www.thefamilyhomestead.com/breadmaking101.htm you can follow the basic directions using this recipe..

  15. Sunday night I looked in my freezer for hamburger buns and didn't find any....it's so nice to be a reader of a blog that gives women the idea that they can MAKE their own buns. I whipped up a batch of buns in no time. They were yummy and I felt so good about making something that in times past I would have gone to the store and come home with $20 worth of stuff that I didn't really need!
    Thanks again!

  16. Crystal,
I just made your buns and Cinnamon Rolls (Yumm!) and my buns came out too dense... I'm wondering if it's an altitude issue (Denver-mile high) or if it was because I kept squishing them to make them look more like hamburger bun shape. Ideas?

  17. Heather Q, Could very well be the squishing.. you just roll them into a ball and gently flatten a little.. not much.. not enough rise time will also do it.. they need to rise until doubled in size, be patient if it is taking awhile. If it is not rising well then it could be the temp of your water or the temp of the kitchen.. if it is too cool and/or drafty, it won't rise well and they will be dense..
