Meals from the Homestead (formally Menu Monday)





Good Morning!
Here's a look at what I was cooking up last week...


This last week wasn't all that creative. We grilled a few times. It was easy and a fun way to spend time enjoying the warmth of summer and visiting with my son. 

We had burgers twice. Once was last Sunday and I posted that one last week. On Monday we had the same thing, so I didn't bother to get a picture. 

Our next meal was steak and corn on the cob. I served salad and potato salad for sides..

 

I made a quick meal of burritos on another night. I cooked up brown rice in my IP and while that was cooking I fried up 2 pounds of hamburger. When it was done I mixed in about 2 1/2 cups or so of the brown rice and seasoned it with salt, pepper, garlic and taco seasonings. 

I put this on tortillas with a little cheese and a sprinkled hot sauce on it and rolled it up burrito style. 

 
I served this with salad and tortilla chips with extra salsa on the side. 

I also made brats on the grill and had coleslaw and potato salad on the side. I got distracted with my son being here and forgot the picture.  :) 

As the week was coming to a close and we took my son to the airport, we left and stopped at Costco to pick up a pizza. Costco's pizzas are good and so reasonably priced. A large size pizza is $9.95. A bargain in my book!

I made us a couple side salads to go with this and we were set..



While we were at Costco I picked up some of those yummy sausages again and we grilled those along with corn on the cob and shrimp on skewers (brushed with butter and garlic). I was certain I took a pic so not sure what happened to it.

By Sunday I had enough leftovers that needed to be eaten up for our dinner. So we had a 'leftover buffet :)

I made myself a taco salad using the last of the hamburger/rice mixture and gave Hubby a plate of the rest of the leftovers plus a salad..



As much as I'm enjoying all the summer cooking and eating I'm missing soup. I may have to make a batch of soup this week!

  1. Yummy food! We had burritos this week too. I miss soup as well. It's my favorite way to get my family (and myself!) to eat large quantities of vegetables.

  2. Loved seeing your meals this week. I seldom have leftovers. Usually if something is left over we forget about it and it goes bad in the fridge. I don't even want to think about soup with it being near 100* here.
