Pineapple Cake


2 cups whole wheat pastry flour

2 t baking soda

¼ t salt

2 eggs

1 cup real maple syrup

1 t vanilla

1- 20oz can crushed pineapple


In a large bowl combine flour, soda and salt.  Mix to combine.  Add remaining ingredients and mix until all is combined well.  Pour into a 9x13 pan that has been sprayed with non-stick spray.  Bake at 350 for 30 to 35 minutes.  Frost with honey cream cheese frosting.


Honey Cream Cheese Frosting

8 oz. cream cheese, softened
1 cube or stick, butter ( ½  cup ), softened
4 T. honey

With a mixer, beat together cream cheese and butter until smooth.  Add the honey to blend.  Add only enough milk to make a nice smooth frosting consistency.
