1 cup honey

½ cup olive oil

3 cups whole wheat pastry flour

1 ½ t baking soda

1 t cinnamon

¼ t salt

2 eggs

1 ½ cups applesauce

1 cup raisins, opt.

Cream the honey and the olive oil together and very well combined.  Add eggs, one at a time.  In a small bowl combine dry ingredients.  Add the dry ingredients and the applesauce alternately until all is mixed well.  Stir in the raisins if you are using them.  Pour cake batter into a 9x13 pan that has been sprayed with a non-stick spray.  Bake at 325 for 40 minutes.  Frost with Maple Frosting.

Maple Frosting

1 cup milk

3T cornstarch

½ cup real maple syrup

½ cup butter, softened

1 t vanilla

In a small saucepan combine milk and cornstarch and blend together until cornstarch is dissolved.  Add maple syrup.  Using a wire whisk, mix and cook over medium heat until mixture comes to a boil and is nice and thick.  Set aside to cool.

Using a mixer cream butter and vanilla.  Add cooled milk/maple syrup mixture and beat at high speed until the frosting is nice and fluffy.

  2. This sounds so wonderful but I do not have the whole wheat pastry flour on hand (I have everything else). Do you think I could use King Arthur White Wheat flour?
