(a.k.a. Chocolate Mayonnaise Cake)
3 cups whole wheat pastry flour
2/3 cup cocoa powder
1 T baking powder
1 Â½ t baking soda
Â½ t salt
1 Â½ cups honey
1 Â¼ cups mayonnaise
1 Â¼ cup water
1 T vanilla
Combine flour, cocoa powder, baking powder, baking soda and salt in a bowl Add remaining ingredients and mix with a hand held mixer or stand mixer until everything is combined well and very smooth. Pour into a greased and floured 9x13 pan. Bake 350 for 40 to 45 minutes.
Frost with frosting of your choice. We used Honey Cream Cheese Frosting and sprinkled m & mâ€™s over the cake.
