Banana Bread

Last year I purchased some really cute little loaf pans from Walmart.  They are similar to muffin pans only instead of being round muffin cups they are little loaf size.  Here is a pic I took of the pans to give you and idea of what I am talking about:


 


 


I made some banana bread with the pans on Monday and am hoping to make pumpkin bread today..  these little loaves are so cute and would make great gifts.  I have given them to neighbors and friends:


 


And here is my banana bread recipe:


 


Banana Bread


3 ripe bananas, mashed


1 tsp. baking soda


½ c butter (1 cube or stick)


1 c cane juice crystals


2 eggs


2 c whole wheat pastry flour


½ tsp. salt


 


Mix together bananas and baking soda and set aside. In a stand up type mixer or with a hand held mixer, cream together butter, sugar. Add eggs and banana mixture and mix this well then add the flour and salt, mixing well.


 


Spray a loaf pan with a little non-stick spray and pour batter into pan. Bake at 350 for about 45 minutes.


 


You can also make muffins.  This recipe will make approx. 1 dozen muffins.  Spray the muffin tins with non-stick spray and fill muffin cups with batter.  Bake at 350 for 25 to 30 minutes.

  1. I am going to look for these, I plan on making some people baked goods for Christmas (my mail man, a few friends etc,) besides cookies and fudge these would be great to indiviually wrap up on there gift tray..Thanks for posting this.

  3. I was wondering if you cooked your mini loaves for the same amount of time called for in your recipe? Making me hungry, and my supper is still in the oven. :)

  4. Hey, Crystal! I tried this recipe last night (in a reg. loaf) and EVERYone in the family loved it. Including my husband and four children. The children didn't even notice the bread was "different," with whole wheat flour and sucanat. They just knew it was yummy! Thanks so much for sharing it. I'm really excited to find a great banana bread recipe that is healthy.
