Easy, Yummy, Lasagna Soup!!


Winter and soups always go together. Cold days end with a hot bowl of soup to warm you and your family up. What could be better? An easy soup to make! I made this soup for my family last night in no time at all. While the noodles were cooking I made a salad. I served it with a loaf of store bought French bread and had dinner on the table quick like!
 



Lasagna Soup

2lbs. hamburger
½ lb sausage (such as Jimmy Dean)
1 medium onion, chopped
4 to 5 medium sized mushrooms, sliced
2oz pepperoni, cut up, optional
1qt spaghetti sauce, or equivalent store bought amount
2qts chicken stock
10 oz. pasta of your choice
15oz ricotta cheese
1t salt
2t Italian seasonings
Mozzarella cheese for sprinkling on top of soup, optional

In a 6 to 8 quart stock pot cook hamburger, sausage, onions & mushrooms until meat is no longer pink and veggies are soft. Add pepperoni, if using.

Add spaghetti sauce and chicken stock. Bring to a boil and add pasta. Bring back to a boil and simmer for the amount of time required by the pasta of your choice.

When the pasta is done add ricotta cheese and stir to melt and mix in with the soup. Add salt and Italian seasonings. Heat and serve. You can put a little mozzarella on the top if you would like.

Serve with some thick and crusty French bread and a salad for a warm and delish winter meal!
