Salmon Stuffed Zucchini
I had this on my menu for later in the week but decided last minute to make it
last night. I had zucchini that needed to be used and another cabbage to be
turned into coleslaw. This was soooo good!! My family really enjoyed this meal.
I started with a few large size zucchini .. the ones with too many seeds to use for muffins or other baked goods. I also had a few yellow squash as well. I made a double batch of my salmon patty recipe: http://homesteadinghomemaker.blogspot.com/2012/06/salmon-or-tuna-patties-for-freezer.html I cut my zucchini (and yellow squash) in half the long way and scooped out the seeds. I used the salmon patty mixture to stuff them. I put them on a large tray and baked them at 350 for about 45 minutes.

While they were baking I cut up 3 large sweet potatoes, 2 medium size potatoes, the leftover ends of the zucchini and yellow squash and one large onion. I put them in a bowl, drizzled with olive oil, salt and pepper. I spread this out on a tray…
After the salmon zucchini were done I put the veggies in the oven to roast at 400 for about 40 minutes. While they were roasting I made a batch of coleslaw: http://www.thefamilyhomestead.com/coleslaw1.htm

That really does look good to me! I sorrowfully haven't trained my youngest to like this kind of cooking. I need to introduce her more to it. I have learned that the only way to like something is to just do it, until you tolerate it, then you eventually can't do without it. That's true with anything, good or bad. Those ARE great pictures, Sierra!

Great Idea. I've had zucchini stuffed with everything but never thought of using salmon.
