Dutch Oven Chili


After my last blog entry on cast iron I went ahead and bought the 5-qt dutch oven. I told my hubby about the deal on Amazon and he said, “Go for it!”. So I did :). It arrived last week and over the weekend I took it for a test drive. I made a pot of chili with it and I have to say I LOVE this pot!!


Here is the chili recipe I used:


Dutch Oven Chili
2 to 3 T olive oil
1 cup chopped onions
1 cup chopped peppers (these can be green or red or yellow peppers or a combo of any of them)
1 cup chopped celery
1 lb hamburger
2 14oz cans diced tomatoes
5 cups cooked red beans – Reserve a couple cups bean broth from cooking the beans
2T chili powder
1T hot pepper sauce (such as the brand Tabasco)
1T minced garlic
1t salt

Heat a 5 qt dutch oven over medium high heat. When it is hot, add the oil and let it heat up a bit. Add the onions, peppers and celery. Stir this around and cook it for a few minutes. Add the hamburger meat. Cook it all until the meat is no longer pink and veggies are soft.

Add the diced tomatoes, beans and spices. Bring to a boil. Reduce heat and cover with lid. Let this simmer on low for about 2 hours.

Serve with cornbread and a green salad.

After you preheat the pot and add the oil add your veggies and stir them around to get a head start on cooking before adding the meat..



Now add the hamburger and let this cook until the meat is no longer pink and the veggies are well cooked..



Add the remaining ingredients. Add extra bean broth to give you the consistency you desire..



Bring to a boil, reduce heat, cover and simmer for about 2 hours. When you are done you will have some awesome tasting chili…

  2. Be sure to re-season that dutch oven well now that you have cooked tomatoes in it. If you do not pay close attention, it will RUST. Take it from the voice of experience. Cast iron does not like acidic foods.

  8. Nice! I have a le Creuset one which is enameled cast iron and it's incredible. Can't use it these days because I have a pretty glass top stove and it'll scratch it up! Looks like a good soup! Have you tried a camp dutch oven? You can cook what you're making right out in the open!

  9. Cozy, I have read a lot on the internet that women are using cast iron on their glass top stoves.. they say they are just very careful. You might want to do some research and see what you think..
