Crockpot Cowboy Casserole
I was asked to share this recipe if it turned out. It was very good and easy!! It was a hearty hot meal for a cold winter night that my family devoured. I felt lucky I’d remember to pull some aside for a picture!
Crockpot Cowboy Casserole
2lbs hamburger
1 medium onion, chopped
1 ½#’s red potatoes, chopped into bite size pieces
1 can diced tomatoes
2 cups frozen corn (or 1 can, drained)
2 cups beans of your choice
4oz cream cheese
2t salt
1t pepper
1 cup grated cheese
Cook hamburger and onions until meat is no longer pink and onions are soft. Put hamburger/onion mixture into 6 quart crockpot. Add remaining ingredients except cheese. Cover and cook on low for 8 hours. Sprinkle grated cheese over the top in the last half hour.
Serve with dinner rolls or biscuits and salad.
I’ve been contemplating on turning this recipe into a
freezer meal. I’m going to try using a package of frozen hash browns (the little
cubes) in place of the potatoes (potatoes will turn brown in the freezer) and
then putting it all into a freezer bag. I’ll keep you posted on how that works!

I'm making this! Anything in a crockpot is what I make for dinner these days! Thanks for sharing!
ReplyDeleteI've been adding a lot of cabbage to my recipes lately because it's so good for you and it's so inexpensive this time of year (like 17 cents a pound!! for St. Patrick's) It seems to take on the taste of whatever its cooked with and if I cut it like I do the onions, no one really knows the difference. I've found it to be a great meal extended. It keeps in the fridge forever too! I really like your freezer to crockpot meal ideas!!
ReplyDeleteCan't wait to hear how the freezer version turns out! Thanks for sharing!
ReplyDeleteI am making this today -just a few more hours to go! I hope to see the freezer version too!!
ReplyDeleteHope you and your family enjoy it as much as we did!! Crystal :)
DeleteOh.. I plan to try out the freezer version this week!! :D
DeleteThis is absolutely delicious! I'll definitely be making this again soon. Thank you so much for sharing the recipe.
ReplyDeleteThis looks like something my family would like, I am going to give it a try and in addition to putting in some cabbage like another commenter suggested, I am going to sneak in a little grated zucchini. :)
