Menu Monday!






As quick as it seems summer started here things are starting to cool down. We have a couple more days of warm weather and then it starts hitting the low 70's. It also makes it hard to blog consistently when I'm outside enjoying the few days of hot weather we've had this year. :) I do kind of feel like I missed out on summer this season. Such is life. But the cooler weather and a little rain in the forecast have me thinking of soups.

Tonight I'm making a “roasted” chicken in my Instant Pot. I'll make some mashed potatoes and turn all those wonderful juices the IP makes into some yummy tasting gravy. My neighbor also blessed us with some corn on the cob from his garden. So that will also be served along with a nice green salad.


The rest of the week is looking like this:


Sausage Potato Chowder
This is one of my favorite recipes. I'm converting it into an Instant Pot recipe so we'll see how that goes. Garlic bread and a salad will be the sides.


Chili
I figure this will be a good one later in the week. I'm planning it for our rainy day. Chili and rainy days seem to go together perfectly. I'll serve tortilla chips & salsa and a salad with this meal.


Lemon Butter Chicken
My daughter in law brought this recipe to my attention. It is an Instant Pot recipe (she has one too :). And she said it was very good. Looks like a super simple recipe to make and I'm going to give it a try. I'll serve rice and either green beans or broccoli with it.


That should do it for the week. How's your menu planning coming along?

    1. Yes.. you can brown hamburger, chicken .. any meat in it.. They are wonderful!!
