Cooking on the Homestead

Tonight for dinner we had Salmon Patties, Garlic Roasted Potatoes and Green Beans. It was a yummy dinner that my family enjoyed quite a bit!



I thought I would share it with you, step by step, today…..

Garlic Roasted Potatoes

This is one of our favorite ways to eat potatoes, well maybe mashed potatoes runs a close second. It is a very easy dish to put together.

You will need an amount of potatoes to feed your family. For the pictures below I used about 3lbs along with some minced garlic, salt, seasoning salt and olive oil..




I chop the potatoes up into bite size pieces…




Then I get out my 9x13 pan and some non-stick cooking spray. I spray the pan real well with it. Then add the potatoes and pour on some olive oil, the amount you need is based on how many potatoes you use. You want them nicely coated with the oil..



Next, I add minced garlic. For batch I used one kind of heaping tablespoon along with salt, pepper and some Johnny’s Seasoning Salt (no measurement, just gave it a few shakes)….



Then stir it all up...



Now bake in a 400 degree oven until the potatoes are soft and golden brown. Make sure you stir them around a few times while they bake. This can take an hour or so , but that will also vary depending on how many potatoes you use.






Because the potatoes take longer to cook than the salmon patties, I started those first. Once they were in the oven I moved onto the salmon patties.

I have a recipe on my site that uses bread cubes and a few other ingredients to make the patties. We like this recipe but actually like the one I am showing you better. This recipe uses cooked brown rice. I will post the recipe at the end of the tutorial.

For this recipe you will need: canned salmon, cooked brown rice, garlic, onion, eggs, whole wheat flour, salt and pepper… by the way, I doubled the recipe when I made it..




Begin by chopping the onion into small pieces…




Now mix the remaining ingredients together. You want a mixture that clumps together. If it is to dry then add another egg and if it is to moist then add a little more flour…..






Now it is time to fry them up. You can use a frying pan or a griddle. I have one of those stoves that allows me to remove two burners and put a griddle in their place. I have used this one a LOT over the years (as you can tell by its looks!). Heat up the griddle until it is nice and hot. I fry these in olive oil. So coat the griddle with the oil…




Use a ¼ cup measuring cup to scoop out the salmon patty mixture. Carefully put this on the fry pan (or griddle) when the oil is nice and hot. Use the back of the measuring cup to flatten the patty....





Cook on the first side until it is golden brown and turn over and cook on the other side until golden brown, about 2 to 3 minutes on each side…







Continue cooking until all the patties are finished.. this double batch gave me 35 patties.



Here is the recipe..

Salmon Patties

3 cups cooked brown rice
1 6oz can salmon, do not drain
1 medium onion, chopped fine
1t minced garlic
1t salt
½ t pepper
2 eggs
½ cup whole wheat flour

Combine all ingredients together. The mixture should be able to hold together on its own, not fall apart when you scoop it up. If it is to dry, add another egg and if it is to moist add a little more flour.

Heat a frying pan until hot, add a few tablespoons of olive oil and heat it up. Using a ¼ cup measuring cup scoop out salmon patty mixture and carefully put on hot frying pan. Use the back of the measuring cup to flatten the patty. Fry until it is golden brown and then turn over and cook on the other side until golden brown. This will take about 2 to 3 minutes per side.  Makes approx. 18 patties

Serve with tartar sauce on the side.


Here is my recipe for homemade tartar sauce..

Tartar Sauce

¾ cup mayo
¼ cup pickle juice (from a jar of dill pickles)
2 to 3T chopped dill pickles
2t dried onion
salt, pepper, seasoning salt, to taste

Combine above ingredients and mix until well blended.

  2. Thanks for sharing these recipes. I am always looking for new recipes. Just curious, we do not have dill pickles on hand. For the tartar sauce how would it be if I used sweet pickles instead. Thanks again for sharing. God bless.

  3. Donna, I am sure you could use sweet pickles.. we are just not real fans of a sweet tartar sauce, but if that is ok with you, I am sure it will work fine.

  4. My mom used to make salmon cakes for us when we were growing up. If we didn't have salmon she would use tuna.

    The dinner looks so yummy. I usually make tarter sauce with sweet pickles, but I am going to try it with the dill. Thanks for the recipes.

  5. Do you make this with leftover rice or do you make fresh rice to use in this recipe? I didn't know if leftover rice would stay too hard in the patties, so I thought I would check. These look yummy! Bet my mom and dad would like these as well.

  6. Gina, you can use either fresh cooked rice or leftover rice. The fresh rice is usually a bit stickier and holds the salmon cakes together better, if I use leftover rice I sometimes have to add an extra egg and a bit more flour so they hold together better.
