Overnight Cinnamon Oatmeal Pancakes

2 cups quick oats
2 cups milk, buttermilk would work also
½ cup whole wheat pastry flour
2 T fructose or Sucanat
1 t. baking powder
1 t. baking soda
½ t. cinnamon
½ t. salt
2 eggs
¼ cup very soft butter

The night before mix together the quick oats and milk, and refrigerate until morning. In a separate bowl mix together flour, fructose or Sucanat, baking powder, baking soda, cinnamon and salt. Set this aside. In the morning mix the oatmeal mixture, eggs and butter into the dry ingredients. You will most likely need to add more milk. Add one tablespoon at a time until it reaches the desired consistency. Cook on an ungreased skillet or griddle over medium heat. These take a little longer to cook than regular pancakes. The edges will looked cooked and the centers be slightly bubbly and the bottoms will be lightly browned when it is time to turn them. 


 


Brunch Baked Eggs

Prepare this one the night before and put in the oven in the morning to bake.

3 cups shredded Monterey Jack (12 oz)
12 oz. fresh mushrooms, sliced
1/2 med. onion, chopped
1/4 c sweet red pepper, thinly sliced
1/4 c butter, melted
8 oz. cooked ham, chopped
3 c shredded Monterey Jack (12 oz)
8 eggs, beaten
1-3/4 cups milk
1/2 cup flour
2 T fresh chives, basil, tarragon thyme or oregano
1 T parsley

Sprinkle 3 cups cheese in bottom of 13x9x2 baking dish. In a frying pan sauté mushrooms, onion and red pepper until tender but not brown; drain well. Put on top of cheese. Then layer ham and add additional cheese on top. Cover and chill in fridge over night. The next morning (or if wanting to get as much prepared ahead of time as possible, this next step can be done the night before and put in the fridge until morning) combine eggs, milk, flour, chives and parsley. Pour over cheese layer (you would pour this over the next morning if doing things ahead of time). Bake 350 degrees for 45 minutes 


 


Breakfast Burritos

These amounts should be made to fit your need.

Whole wheat tortillas
Scrambled eggs
Grated cooked potatoes, opt.~~ *see note
Grated cheese
Cooked and crumbled sausage, opt.
Salsa or ketchup, your choice

Fill whole wheat tortillas with scrambled eggs, chopped cooked potatoes, cheese, sausage and top with salsa or ketchup. my family even eats these for dinner often!

~~*Note on potatoes: You can cook your potatoes in a couple of different ways. One way is to grate them either by hand or with a food processor and then fry them in olive oil until crispy. The other way is to take leftover potatoes from last nights dinner and chop them up and heat them in the microwave or fry them up lightly with a little olive oil.





Baked Oatmeal

½ cup light olive oil
½ cup melted butter – 1 cube
1 cup honey
4 eggs
6 cups quick oats
2 1/2 tsp. baking powder
1/2 tbsp. salt
2 cups milk

In a large mixing bowl combine your oil, melted butter, honey & eggs. When this is mixed add the milk. Now add in your dry ingredients, oats, baking powder, salt. Pour this mixture into a 9x13 pan and bake for 45 min. at 350.





Oven Baked Cream Cheese French Toast


1 loaf homemade bread (approx. 16 to 18 slices), cubed
1 8oz. pkg cream cheese
12 eggs
1/3 cup pure maple syrup
2 cups milk


Place half the bread cubes in a 9x13inch pan that has been lightly sprayed with non-stick spray. Cube the cream cheese and put half of it over the bread cubes. Layer the rest of the bread cubes on top of this and then the remaining cream cheese. In a separate bowl mix the eggs, maple syrup and milk well.  Pour this over the bread and cream cheese.  Cover with plastic wrap and put in refrigerator overnight. In the morning bake it at 375 for 45 minutes.  Serve with extra syrup on the side and fresh fruit





French Toast Sticks

6 large eggs
3/4 cup milk
2 tablespoons pure maple syrup
1 teaspoon ground cinnamon
1 loaf homemade whole wheat bread, cut into slices

Combine first 4 ingredients. Blending well with a fork or mixing briefly in a blender. Cut each or your bread slices into 4 strips. Dip strips into mixture making sure you coat them completely with egg mixture. And then put them on a cookie sheet that has been heavily sprayed with a cooking spray like Pam.

Preheat your oven to 400 degrees and bake bread for 7 to 8 minutes. Turn bread over and continue baking about 3-5 minutes longer.. you want them to be just nicely golden brown.

You can eat them warm off the grill with butter and maple syrup or flash freeze them and store in a Ziploc bag. They can be reheated for a very quick breakfast 


 


Peach Coffee Cake

3 cups whole wheat pastry flour, pack the flour down slightly if it is freshly ground
2 tsp. baking powder
1 tsp. baking soda
1 pinch of salt
1 cup butter – 2 cubes or sticks, softened
2 eggs, well beaten
1 cup honey
1 cup buttermilk
1 tsp. vanilla
1 15 oz. can of peach slices, fruit juice packed preferred, drained
½ teaspoon cinnamon

Mix all the dry ingredients and set aside. In a large mixer bowl beat butter and honey until well blended. Add eggs, buttermilk and vanilla and mix again. When this is mixture is well blended, add your dry ingredients and mix until it is well combined. Spray a 9x13 pan with cooking spray and pour batter into pan. Now take your drained peaches and layer in an attractive way over the top of the cake and sprinkle the cinnamon over the top. Bake this cake at 350 for 40 minutes or until knife inserted in the center comes out clean. 


 


Whole Wheat Pancake Mix

25 cups whole wheat pastry flour
1 ¼ cups baking powder
¼ cup salt
6 2/3 cups powdered milk

Combine all ingredients very well in a large bowl. Transfer to zip type freezer bags, label. Store in freezer to keep flour fresh.

To make one batch:

3 cups mix
2 eggs
¼ cup olive oil
2 cups water

Combine mix, eggs and olive oil. Add half the water, stir and only add enough of the remaining water to achieve the consistency you desire. Bake on a hot skillet. Serve with butter and real maple syrup!


Variations:

Banana Pancakes:Add:
1 cup mashed bananas (approx. 2 large bananas) to one batch of pancake batter.

Blueberry Pancakes:
Add:
1 cup fresh or frozen blueberries to one cup of pancake batter.

Chocolate Chip Pancakes:
Add:
½ to 1 cup chocolate chips to one batch of pancake batter.

Pumpkin Pancakes:
Add:
1t cinnamon
½ t ginger
To dry mix.
Add:
1 cup pureed pumpkin to one batch of pancake batter.

  1. Quick question... I know you buy your coconut oil from Costco and was wondering if it smells like coconut. I have bought the Bronners coconut oil and it smells/tastes like coconut. I was hoping to find a large container that doesn't taste like coconut so I can use it for cooking vegetables.

    1. If you want the benefits of coconut oil and don't want it processed, then it will smell and taste like coconut. That's one way to know you're not getting processed or hydrogenated oil. If you don't want the taste to come through on your veggies I recommend avocado oil.. very mild and handles high heat. I use it a lot nowadays.

    2. Thank you for the information. I'll check that out. I love the taste of coconut oil in most things but don't care for it on my veg.
