This Week’s Menu

Leftovers – Made a big pot of Yummy Pinto Beans yesterday and have enough for dinner tonight along with a salad and whole grain crackers

Crockpot pork roast, mashed potatoes, salad

Hamburger/rice enchiladas, tortilla chips, salsa, salad

Salmon patties, garlic roasted potatoes, salad

Tomato soup, ham & cheese sandwiches, salad

BBQ – having my daughter Hannah and her family over for dinner … have not figured it all out yet!

  1. Do you have a weekly "big meal day"? Our Sunday dinner growing up, as well as everyone's I knew was the big meal of the week. My mother and every mother and grandmother I knew cooked Saturday and/or early Sunday morning, came home from church and finished up with canned vegetables and "brown and serve" rolls and iced tea!I wonder if leftovers on Sunday isn't a better idea - no fuss before or after church and still have good eating besides!
