So, no, you can't can in them. With a pressure canner you need to be able to know your food is being held at a certain pressure for a certain amount of time. And the pressure might be different for different circumstances (altitude for instance, being one). It's always a delight to find another full time homemaker who is proud of her contribution to her husband's wellbeing. And you are the reason I bought an Instant Pot. Haven't tried the bone broth yet, savings up bones for that. Many years ago I got mononucleosis. For a week I was only just barely able to swallow very thin liquids and not much of that. At the end of that week, when I was just beginning to be able to swallow a bit, my best friend made me her mother's "Jewish mom's miracle cure"...chicken soup with matzo balls. It was absolutely the best meal I've ever had in my life! And yes that could well be because of not having eaten for a week! Ha. But you know, I felt an afoul lot better the next day. I thought it would be very handy to use if I just wanted to can a jar or two of beef , or, if I had enough left from a meal, a small jar of spaghetti sauce. Or even the broth you just wrote about.
