I use them ALL THE TIME and they are absolutely delicious. Your "What to do with 25 lbs. of beans" article (which is at her website www.thefamilyhomestead.com/recipes) came in very helpful when I was first starting our bean venture.<br><br><br>I do have a tip to help with the "musical fruit"iness of beans...have you heard of adding a small (2") piece of dried seaweed to the soak water? (Of course, this only works if you do a pre-soak.) It is AMAZING. The difference in diapers post-normal beans and diapers post-seaweed beans is undeniable.<br><br><br>All you do is add the seaweed and leave it there...even for the cooking. It doesn't change the taste or anything (although I don't salt mine b/c I think the seaweed accomplishes that).<br><br><br>I like to do a whole pound in the crockpot...cover with about 4" of water and soak w/ seaweed overnight; drain water and put fresh water in in the morning, cook on high for a couple of hours. A pressure cooker is the way to go! :-)<br><br><br>I love home-canned beans, although they do taste different from freshly cooked beans. Commercially canned pinto beans are . . . strange, but I've found black beans to be good.
